Easy Chocolate Chip Cookies

Now for those of you amongst us reading this, who wonder why I’ve entitled this ‘easy..’, as you know that cookies are always easy, I’ve added that for bakers such as myself who are perhaps prone to the odd cake mishap and always have an eye out for a simple, 10 minutes, yummy snack recipe. This is it now, and the Husband has already requested that I make batches of these daily!

It’s so easy, I even allowed said Husband and the 4yo to make them, though I was overseeing – the Husband isn’t great with teaspoon versus tablespoon, for example, which could cause issues…! So let me share it..

125g margarine
125g sugar
1 egg
1 tsp vanilla essence
125g porridge oats
150g plain flour
1/2 tsp baking powder
200g plain dark chocolate (broken up into little chunks)

Preheat the oven to 180c, and cream the margarine and sugar together. Then add in the egg, vanilla and oats. Mix it all up. Then add the flour and baking powder. For the chocolate, either use chocolate chips or bars broken up into smaller chunks – we actually used half and half as that was just what we had in the cupboard. Add your chocolate to the mixture and it’s ready. It should make 18 cookies, so dollop them into balls onto greased trays, spaced apart, and just squidge them down a little when doing so. Pop them into the oven for 12-15 minutes. They shouldn’t go hard and crispy, so get them out before this, and they’ll harden as they cool.

Then eat them all. Every single one – they’re delicious!

  2. Considering my resolution to make choc chunk cookies with broken up easter eggs this may just be the recipe for me! I hope it will work with milk chocolate chunks though… #TheThemeGame
