Blueberry Pancakes Recipe

If there’s one breakfast guaranteed to get all of my family excited (the Husband included!) it’s pancakes. We like the thick and fluffy American style ones here, and we either have them plain with a little sugar or syrup, or add in some fruit. They’re often our Sunday morning treat, and as they’re so fast and simple to make, I don’t mind at all! This recipe is a real favourite with the kids, as they do love blueberries…

Blueberry Pancakes Recipe

Ingredients:
1 cup of self-raising flour
1 cup of milk
1 egg
A pinch of salt
100g of blueberries
A few knobs of butter

1. Pop the flour, milk, egg and salt into a mixing bowl and whisk it all up. Add in the blueberries, and mix them around.

2. Heat a knob of butter in a frying pan, and then put 1 ladle of the pancake mix in,

3. After a minute or so, turn it over so that the other side lightly browns, too, for around another 30 seconds to a minute. Serve onto a plate as soon as it’s cooked on both sides.

We actually make these plain, and then add in fruits to the pan with each pancake, as the Husband likes his without fruit. It’s handy, as it means we can vary each pancake as we go!

  1. I’m with you I love pancakes! Especially American ones. I also quite like them drowned in maple syrup and bacon! These blueberry ones look scrummy & slightly healthier! I may just have to have them for breakfast today! #recipeoftheweek
